Carts that carry food or clean dishware should be NSF-listed with cleanable, non-absorbent surfaces. Keep soiled-dish transport separate from clean, and don't store food-contact items on a cart used for waste.

Molded plastic (poly) carts are lighter, quieter, and won't dent — popular for bussing. Stainless is more durable for heavy equipment moves and hot environments.
