Induction is the biggest shift in commercial cooking in a generation — but it isn't automatically the right call. Here's the honest trade-off against gas.

The big induction wins are a cooler kitchen, lower energy use, and — for genuinely non-grease cooking — the chance to avoid a Type I hood, which can transform a build's cost. But greasy cooking still produces grease vapor that an AHJ may require a hood over regardless of the heat source, and induction needs the right cookware and heavy wiring.
