A commercial steamer cooks with moist heat, which cooks vegetables, seafood, rice, and proteins fast while keeping color, texture, and nutrients better than boiling in a pot. The big questions buyers ask are: what type (convection, pressure, or combi), boiler or boilerless, and how good is my water? That last one quietly decides your repair bills.
Convection (also called "connectionless" when boilerless) steamers circulate atmospheric steam around the food — flexible, gentle, and the most common choice. Pressure steamers cook sealed under pressure for the fastest cook times and highest throughput, but you cannot open them mid-cycle. A combi oven's steam mode does steaming plus dry and combination cooking in one box — the most versatile, and the most expensive.

This is the decision that drives cost of ownership. A boiler (generator) steamer keeps a reservoir of steam ready, so it recovers fast and produces "drier" steam — great for volume — but it needs a water connection, drain, and treated water, and the boiler needs regular descaling. A boilerless / connectionless unit heats water in a pan right in the cavity. It sips water (roughly 1–2 gallons per hour versus tens of gallons for a boiler), is far easier to clean, and often needs only a nearby water fill and drain — but it recovers more slowly and a food spill means stopping to empty and refill the pan.
Tip: Water quality is the single biggest driver of steamer repair costs. Hard water leaves limescale that clogs boilers and heating elements. Ask the manufacturer for the maximum grains-per-gallon hardness they allow, test your water, and budget for a filter or softener — especially with any boiler-based unit.
Before you fall in love with a model, check the site. Boiler units typically need a dedicated water line, a floor or indirect drain, and treated water under the manufacturer's hardness limit. Boilerless units still need water and drainage but are more forgiving. Electric steamers need the right voltage and phase; gas units need a gas line and often a flue.
