Why a wok range is its own animal

A Chinese wok range (also searched as "Chinese wok stove" or "wok burner") is built around one thing: extreme heat to create wok hei, the smoky, high-temperature sear of great stir-fry. These are not standard ranges. The buying decisions are BTU per burner, number of burners, deck cooling type (waterfall vs duck-board vs waterless), and — the one people underestimate — the enormous ventilation and make-up air demand.

BTU: it is a lot

Where a standard range burner might be 25,000–35,000 BTU, a commercial wok burner commonly runs 90,000 to 125,000+ BTU per burner. That firepower is what lets a thin-walled wok flash-sear. Burners come as round jet or "duck-bill" (shield) style; duck-bill jets resist clogging better. Ranges are sold by burner count — 1, 2, 3, 4, or more — so size to how many woks fire at once during your rush, not your average.

Deck cooling: waterfall vs duck-board vs waterless

All that heat would warp the stainless deck, so wok ranges use a cooling strategy. This is a genuine buying choice.

Tip: The wok range is often the easy purchase — the ventilation is the hard part. At 100,000+ BTU per burner, a multi-burner wok line puts out more heat and grease than almost anything in the kitchen, and it demands serious exhaust and matching make-up air. Undersized ventilation is the top reason wok installs fail inspection.

How many burners and what layout

Wok ranges are configured to the line, not off a shelf. Beyond raw burner count, think about the work positions: many models pair each wok well with a small rear "soup" or stock burner and a swing faucet for rinsing and filling woks between orders. Decide whether you need a step-down deck for different wok diameters, and confirm the wok ring size (commonly around 13" to 16") matches your woks. Chinese kitchens frequently run dedicated stations — a couple of high-fire wells plus a low-fire well for sauces — rather than identical burners across the top, so map your menu to burner roles before you order.

Ventilation and make-up air

Wok ranges require a heavy-duty Type I grease hood and generate very high exhaust CFM. Because you are pulling so much air out, code requires you to bring a nearly equal volume of tempered make-up air back in — skip this and the kitchen goes negative-pressure, doors slam, and burners starve.
