A steam table keeps prepared food hot and ready to serve on a line, buffet, or cafeteria counter. It is a holding device, not a cooker — food must already be cooked and hot when it goes in. Get the well type, fuel, and pan layout right and it holds product at safe temperature all service without drying it out. Here is how to choose.

Wet vs. dry operation

Almost every steam table can run wet or dry; the question is which suits your food. Wet holding surrounds the pans with gentle, moist heat from water in the well. Dry holding heats the pans by radiant heat with no water.

Most operators run wet because the humidity protects delicate items from drying and scorching, and it heats more evenly. Run dry only for foods where moisture ruins texture — and never run a wet table without enough water, which can warp the wells.

Electric vs. gas

Both hold food safely; the choice comes down to your utilities and how the table is used.

  • Electric: precise, even temperature control and simple plug-in installation where there is no gas line. Small tables run on 120V; larger ones need 208/240V, often a dedicated circuit. Slower to heat up, but easy to dial in.
  • Gas: heats up fast and typically costs less to run where gas is already plumbed. Best for high-volume lines and facilities with existing gas infrastructure. Temperature control is a bit coarser than electric.

Sizing: think in wells and pans

Steam tables are sold by the number of wells, and each well is measured in standard 12×20 full-size hotel pan equivalents. Common builds are 2, 3, 4, and 5 wells.

  • 2–3 wells: small cafes, food trucks, limited menus, catering.
  • 4–5 wells: full buffets, cafeterias, high-volume service.

The real flexibility is pan configuration. One full-size well can hold a single 12×20 pan or be split with adapter bars into halves, thirds, sixths, or ninths — so a 4-well table can serve a dozen different items. Match pan sizes to how fast each item sells so nothing sits too long.
