This is a volume question first and a space question second. A reach-in freezer is a self-contained cabinet you buy, plug in, and use. A walk-in freezer is a built room with its own refrigeration system. The right choice comes down to how much frozen product you actually turn over — not how much you'd like to hoard. A rough rule: once one or two reach-in freezers stay full and you're still short, or you're taking bulk frozen deliveries (whole cases of protein, fries, bakery dough) that you buy at a discount, a walk-in usually pays off. High-volume operations, caterers, and anyone with limited delivery frequency lean walk-in. A cafe, bar, or small quick-service spot that gets frequent deliveries often never outgrows reach-ins.
Frozen storage also tends to grow with menu complexity. Don't assume freezer sizing mirrors cooler sizing. Frozen inventory is denser and slower-moving, so you can pack a freezer tighter than a cooler — but a walk-in freezer also needs an insulated floor, a low-temperature compressor, and door heaters or a pressure-relief port to fight ice buildup, none of which a walk-in cooler requires. Freezers work harder than coolers because the temperature gap with the room is bigger, so both types cost more to run at freezing than at fridge temperatures.
