Choose by mount and whether ADA is required for the location:

Hand sinks are mandatory and can't be used for anything else — dishwashing or food prep in a hand sink is a violation. Code requires them conveniently located in prep, warewashing, and bar areas, supplied with warm water (≥100°F), soap, and single-use towels (FDA Food Code 5-202.12, 6-301). An ADA model is often required for public-accessible areas.
