Water touches almost every expensive machine in the kitchen — ice makers, combi ovens, steamers, dish machines, espresso and coffee brewers. Untreated water is one of the leading causes of repair calls on that equipment, and it quietly wrecks efficiency long before anything actually breaks. The two problems to manage are scale (hardness minerals) and chlorine/off-tastes, and different equipment cares about different things.
Hard water carries dissolved calcium and magnesium. Heat it — in a boiler, steamer, or ice-machine cycle — and those minerals drop out as limescale, the chalky crust on heating elements and inside boilers. Scale is an insulator, so the machine has to burn more energy to move heat through it. Industry sources note that even a thin layer — on the order of 1/8 inch — can raise energy use by roughly 25%, on top of shortening equipment life and voiding some warranties.
There is no single "kitchen filter." The right choice depends on what the machine is sensitive to:

Manufacturers often publish a target water spec (hardness, chlorides, TDS, pH). A common approach for steam equipment combines carbon filtration with reverse osmosis to strip hardness and dissolved solids. Note that coffee and espresso are the exception — some mineral content is desirable for flavor and boiler protection, so the goal is balanced water, not water stripped to zero.
Cartridges have a finite capacity measured in gallons. Once exhausted, a filter stops protecting the equipment and can even harbor problems. Change cartridges on the manufacturer's schedule or when flow/pressure drops — many operations tie it to a calendar (for example, quarterly or by volume) so it doesn't get forgotten. Test your incoming water hardness first; the harder your local water, the faster filters load up and the more scale control you need.
These terms get used interchangeably but do different jobs, and picking the wrong one wastes money:

Many kitchens stack them — carbon first, then scale control or RO — and add a blend or bypass valve so coffee and espresso get water with some minerals kept in for flavor. The right stack depends on your local water and each machine's published spec, so start from the equipment manuals.
