A BTU (British thermal unit) is a unit of heat — roughly the energy needed to raise one pound of water by one degree Fahrenheit. On gas equipment, the BTU-per-hour rating tells you how much heat a burner can deliver when it is running full out. Match BTU to your menu and volume: a high-output wok range earns its fuel bill in a stir-fry house, but the same burners waste gas under a low-volume breakfast line.
